The meringue roll with real bourbon vanilla is addictive! Here comes the recipe:

Beat 5 egg whites, 240g icing sugar and a dash of lemon juice and spread on a baking tray lined with baking paper.

Bake at a temperature of 160°C for 20 minutes. For the filling, mix 250g mascarpone, 300g cream cheese, 1/2 teaspoon bourbon vanilla powder, 2 tablespoons powdered sugar with a little pistachio paste and spread on the cooled meringue.

Add raspberries for a little freshness. Then twist everything together into a roll.
